Baked Red Emperor

Ingredients:
400 – 500 grams fillet Red Emperor (or other relatively firm fish)
Olive oil spray
2 Lemons
Salt and Pepper


Method:
Preheat oven to 180⁰ C.
Lay a piece of alfoil, long enough to fully wrap the fillet, on a baking tray.
Lay a piece of baking paper, the same length as the alfoil, on top of the alfoil.
Lay a shorter piece of baking paper on top.
Spray the baking paper with olive oil spray.
Add a generous squeeze of lemon juice.
Place the fillet on the paper.
Spray with olive oil spray, season lightly with salt and pepper and add more juice over the fish.
Fold the shorter piece of baking paper to hold in the juices.
Wrap the baking paper around the fillet to make a parcel.
Wrap the alfoil around the baking paper to fully seal the fish.
Bake on the middle shelf of the oven for 30 minutes.
Garnish with lemon slices.
Serve with baked potato and fresh garden salad.
